It’s officially Summer in a few days. Yippee!
I’ll definitely be celebrating the Summer Solstice. Even though I’m so lucky to be living in the land of eternal sunshine, the last remnants of memories from my deep freezing continental dwelling give this time of year a very special meaning.
In the culinary department, Summer is synonymous with big, juicy and crunchy salads! I adore salads, they’re pretty much the staple of my “diet” but in the Summertime I turn into a salad eating machine.
Wholesome salads call for clean, healthy dressings and since many of you have been enjoying the fat-free raw dressings I share in The Global Girl Raw Recipe Series (thanks sooo much for all the lovely feedback and heartwarming emails ;), I thought I’d share with you another delicious oil free and dairy free dressing delight.
I especially love this apple/mustard dressing with greens and super thinly sliced red cabbage (I use a mandoline slicer to effortlessly achieve that super thin texture). As a matter of fact, red cabbage salad with apples (and walnuts) is a classic and super popular French entrée. I’ll share my own version of it with you soon.
Apple & Mustard Dressing
Ingredients
- INGREDIENTS
- 1 1/2 cup of chopped Fuji apples
- 1 tablespoon of Dijon mustard
- 2 garlic cloves
- 2 tablespoons of apple cider vinegar
- 1/2 cup of water
- 1 teaspoon of fresh or dried thyme (optional)
- 4 black mission figs
Instructions
- INSTRUCTIONS
- Place all the ingredients in the mighty Vitamix and blend until you achieve a smooth and creamy consistency.
- You're done! This dressing can be kept in the refrigerator for 3-4 days
- Enjoy!

I added a little honey to give it some sweetness. Is that ok? I’m really a sweet tooth but I wanna try out your salads because they look sooo sumptuous!
I love your salads and dressings. Most people think they cut back on the food if they have salads but the dressings are actually fatty! But not this one. This I likey!
