Hi!! For the lasagna, if I wanted to replace the zucchinis with eggplant would that be fine?
You could definitely replace the zucchini with eggplant however raw eggplant can’t really be eaten as is (it’s really hard to chew), so you would need to freeze and thaw it beforehand (you’ll find more detailed instructions in my raw eggplant bruschetta recipe post: http://theglobalgirl.net?p=22690). So it’s a bit more elaborate but feasible. Enjoy!
